Broccoli & Brie pie in no time

I don’t know how I’ve been living under a rock my whole adult life but I just discover how simple it is to make a pie. From scratch on top of all. But to be honest I discovered the true pleasure of cooking and baking like six months ago so go easy on me.

With our decision to make life slower and more simple we (I) have decided to try to make most things from scratch and therefore buy less and less packaged or prepared food. My goal is to only buy bread, crackers and breakfast cereals this summer and make everything else myself. Bread feels a bit too advanced for the moment since our bakery is at a 2 minutes  walk and the kids eat a lot and… fresh French bread is just amazing so… :)

But back to the pie. This is just so simple and easy to make, even the crust. I started out by buying ready made crust but all the packaging gave my bad conscience so I made one myself and it’s ridiculously easy. Take 125 g butter, 3 dl flour and a tablespoon or two of water/milk. Put the butter in the microwave for 15 seconds, mix it with the flour and liquid and voilà. I’m almost embarrassed I learned this at 40. Then you take broccoli, fresh or frozen (defrost and remove the water) and put it into your crust. Pour on a mix of 2-3 eggs and 2 dl cream, salt and pepper. For the extra yum I cut slices of brie to put on top. 30-40 minutes in the oven on 200 Celsius and serve with a green salad.
